Ingredients
  

  • 500 g Bread Flour
  • 10 g Salt
  • 330 g Water
  • 20 g Honey
  • 20 g Avocado Oil
  • 150 g Active Sourdough Starter fed four hours before

  • Mixing the Dough: In a large mixing bowl, combine the water, honey, sourdough starter, and olive oil. Stir until the starter dissolves. Add the flour and salt, and mix until all the ingredients come together into a sticky dough. Cover the bowl with a damp cloth and let it rest for 30 minutes (autolyse).
  • Stretch and Fold: Perform four rounds of stretch-and-folds, spaced 30 minutes apart. To do this, grab one side of the dough, stretch it up, and fold it over to the center. Rotate the bowl and repeat on all sides. Cover the dough between each round of stretching.
  • Bulk Fermentation: Transfer the dough to a greased container, cover it with plastic wrap, and let it rise for 6–8 hours at room temperature, or until it doubles in size. The timing will depend on the temperature of your kitchen.
  • Shaping the Dough: Once the dough has risen, gently transfer it to a floured surface. Shape the dough into a rectangle, folding the left side into the center, then the right side, and finally rolling it up into a log. Be gentle to preserve the air in the dough.
  • Second Rise: Place the dough seam-side down into a greased bread pan. Cover it loosely with plastic wrap and let it rise for 2–3 hours, or until it has risen significantly.
  • Baking the Bread: Preheat your oven to 400°F (200°C). Place another baking pan over the top of the bread pan to create a steamy environment. Bake for 30 minutes.
  • Final Bake: After 30 minutes, remove the top pan, lower the oven temperature to 370°F (190°C), and bake for another 20 minutes or until the bread is golden brown.
  • Finishing Touch: Remove the bread from the oven and immediately take it out of the pan. If desired, brush the top with a thin layer of butter for a soft, shiny crust. Let the bread cool completely before slicing.
