Apple Strudel with Yeast Dough and Organic Apples

Dough
- 4 1/2 tsp Dry Active Yeast
- 1/2 cup Warm Water
- 1 cup Sour Cream
- 1 cup Plain Yogurt
- 1/2 cup Salted Butter - Softened
- 3/4 cup Sugar
- 2 tsp Salt
- 3/4 tsp Vanilla Extract
- 2 pc Egs
- 7 cups All Purpose Flour
Filling
- 8 pcs Apples - Peeled, cored and sliced
- 1 tbsp Lemon Juice
- 1 tbsp Water
- 8 tbsp Salted Butter
- 4 tbsp Cornstarch
- 3/4 cup Sugar
- 1 tbsp Ground Cinnamon - Optional
Icing
- 1 1/2 cup Confectioners Sugar
- 3 tbsp Butter - Salted, softened
- 3/4 tsp Vanilla Extract
- 4 tbsp Milk
Garnish
- 1/2 cup Sliced and Toasted Almonds
Instructions
- Activate the Yeast: In a mixing bowl, combine the yeast and warm water. Let it sit until the yeast dissolves and bubbles.
- Mix Ingredients: Add sour cream, butter, sugar, salt, vanilla, and eggs to the yeast mixture. Stir until mostly smooth—small lumps are okay. Add 6 cups of flour and mix until fully combined. The dough should be soft and workable. If too sticky, add more flour, 1/4 cup at a time, until it's easy to handle.
- Knead the Dough: If using a stand mixer, switch to the dough hook. If not, transfer the dough to a floured surface. Knead for 8-10 minutes until smooth. Place the dough in a greased bowl, flipping it so all sides are coated. Cover with a dry towel and let it rise for 1 hour.
- Prepare Apple Filling: In a pan over medium heat, melt butter. Remove from heat and stir in lemon juice, water, cornstarch, sugar, and cinnamon. Return to heat, add apple slices, and stir to coat them. Cook for 4-5 minutes until apples are tender but firm. Cool the mixture in a bowl to room temperature.
- Make Vanilla Buttercream Icing: In a bowl, mix powdered sugar, softened butter, vanilla, and milk with a mixer until smooth. The icing should be thin for glazing. Adjust with more milk if needed, or add more powdered sugar if it's too runny.
- Prepare the Dough: After the dough has risen, punch it down. Preheat the oven to 375°F and butter two baking trays. Divide the dough into two pieces and stretch each to fit its tray.
- Assemble the Strudel: Spoon the cooled apple filling down the center of each dough piece. Cut slits along the sides of the dough and criss-cross the strips over the filling. Loosely cover each strudel with foil to prevent burning.
- Bake and Finish: Bake each strudel for about 20-25 minutes, until golden brown. Drizzle the warm strudel with vanilla buttercream icing and sprinkle with toasted almonds. Serve warm or at room temperature. Enjoy!
