Sourdough Beagles

Equipment
- 1 Large Pot
- 1 Oven
- 1 Wire Rack
Ingredients
- 250 gram Water - lukeworm
- 12 gram Salt
- 40 gram Honey
- 500 gram Bread Flour
- 190 gram Sourdough Starter
Instructions
- Combine all ingredients (except for honey) and leave under wet rag for 15 min.
- Then kneed the dough for about 7 min, until becomes nice and elastic.
- Put in a container overnight covered, about 8-10 hours at room temperature, has to double in size.
- Take out the dough onto a floured surface, and divide into 8 equal parts. Book fold until a ball is formed about 4 to 6 times. And let it relax for about 20 min.
- Poke a hole inside and shape your beagles. Place each shaped beagle on an individually cut piece of parchment paper, and place them on a baking pan. (Easier to transfer into boiling water later)
- Cover beagles with plastic foil on a pan and have them rise for about 1 1 1/2 hrs.
- Preheat oven to 350 degrees
- In the large pot bring water to boil and add honey, stir to dissolve.
- Transfer 2-3 (at a time) beagles to boiling water, and boil them for 30 seconds on each side. Then transfer to the wire rack and from the wire rack to a topping of your choice. And then place them on a baking pan with parchment paper.
- Bake for about 20 min, until gold.
Notes
As far as toppings you may use anything you like; poppy seeds, everything mix, sesame seeds, asiago cheese, etc.
