Ingredients:
4 Whole chicken breasts, split, skinned, boned
Dijon Mustard
1/2 cup Virgin Olive Oil
1/4 cup lemon juice
2 tsp thyme
3 tbsp chopped parsley
Directions:
1. Coat chicken with mustard and place in shallow glass or ceramic bowl
2. In separate bowl combine oil, lemon juice and thyme, and pour over the chicken. Cover and refrigerate for few hours or overnight.
3. Turn Ocasionally.
4. Remove chicken from marinade and grill 6 to 8 min per side over coals.
5. Sprinkle with parsley just before serving.
