Cream of Cucumber Soup

Ingredients:

1 large cucumber
1 shallot (or onion, or few spring onions) chopped
1 oz butter
1 oz plain flour
1 pt chicken stock or vegetable stock
1 pt milk
1/4 pt single cream
1 tbsp chopped parsley
1 small clove garlic crushed
1 bunch dill (or 2 teaspoons dried)
grated nutmeg
salt and pepper

Directions:

Put butter, onion garlic into large bowl and cover. Cook for 3 mins on high. Add flour and stir in thoroughly. Wash and grate cucumber, add to bowl and cook for 5 min on high. Stir in stock, parsley, nutmeg, dill and seasoning, cover and cook on high for 7 minutes. Stir in milk and cream and put through processor. Return to bowl and heat for 3 mins. Serve hot or cold.
